Chapelle du Bois is produced in the Languedoc, at the foot
of the Black Mountains, between Beziers and Carcassonne.
The vineyards are situated on red clay rich soils but with large
‘galets’, it is these ‘galets’ that provide the secret to the terroir,
these reflect the sunlight back on to the grapes and also
improve drainage.

Winemaking
Controlling the ripness of the grapes is the key for this wine.
The grapes are tasted regularly by our winemaking team to
decide the right time to harvest. The maceration lasts for ten
days with the Merlot being left a little longer in tank to develop
its depth of flavour.
Tasting notes
The colour of the wine is garnet and rich. The nose is vibrant
and fruity and the palate is beautifully balanced, it is soft and full
with red fruit and spice.
The wine works well as an aperitif or
with red and white meat.
