Pinot Noir is a grape variety which gives the best in cool areas. This is the reason why Tortoise Creek Pinot Noir comes from parcels located in a very specific terroir in Languedoc- Roussillon, close to the Pyrenees mountains, where the low temperature during the night has a big influence on the quality.
Vinification
A small part of the crop is harvested quite early in the harvest season and ferments at low temperature to exalt fruity aromas. The other part, fully ripe, undergoes a traditional, long maceration. 30 % is aged in French oak barrels during many months.
Dégustation
The colour is a brilliant purple. The nose reminds one of violets and red fruit, in a perfect synergy with sweet oaked. The palate is soft, velvety and full, giving us a wonderful feeling of harmony.
Serve at 18°C.
This wine will perfectly accompany game, meat stew, or cheeses. |
