100% Chardonnay
This tremendous cuvee is born in Languedoc-Roussillon, South of France. Tortoise Creek Chardonnay comes from a selection of the best parcels in the area, made by our head winemaker Xavier Roger.
Vinification
The grapes are harvested at full ripeness after many tasting of the grapes and chemical analysis. The grapes undergo a short skin-contact maceration. After pressing and off-settling, the juice ferments at low temperature. The fermentation is very slow and can last sometimes up to one month. An ageing on fine lees is made in order to give smoothness.
Dégustation
This cuvée has a bright golden yellow colour. The nose, complex and intense, shows a beautiful bouquet of flavours, such as pear, nuts and butter. The mouth is velvety and well balanced. The finish is full and exceptionally rich.
Serve at 13°C.
This tremendous cuvee works wonders on scallops, or any white meat dishes or seafood.
