100% Pinot Noir

Monastier Pinot noir comes from parcels located in the South West of Languedoc Roussillon, close to the Pyrénées Mountains. The Pinot Noir finds here perfect conditions of maturation, a lot of sunshine with freshness from the mountains.

Winemaking process
A small part of the crop is harvested quite early in the harvest season and ferments at low temperature to enhance the wines fruity aromas. The other part, full ripened, undergoes a traditional, long maceration. 30 % is aged in French oak barrels over many months.

Tasting notes
The colour is a brilliant purple. The nose reminds one of violets and red fruit, in a perfect synergy with sweet oak. The palate is rich, velvety and full, giving us a wonderful feeling of harmony.

Serve at18°C. This wine will perfectly accompany game, meat stew, or cheeses.
