Winemaking process
The Cabernet Sauvignon comes from the coolest place in Languedoc, near Limoux and the Pyrenees mountains. The limiting mountain soils naturally control the size of the crop ensuing the grapes have excellent concentration of flavour. The altitude of the vineyard provides excellent ripening conditions for the Cabernet Sauvignon based wine, with fresh fruity aromas and high quality tannins. The Cabernet Sauvignon is vinified traditionally in stainless steel tanks under controlled temperature. The wine is aged during many months in French oak barrels. The Syrah comes from a warmer part of Languedoc, which allows the grapes to reach a complete phenolic ripeness and the wine a great smoothness. The vinification is traditional and the ageing is made with oak staves.

Tasting notes
With a bright deep red colour, this wine is rich and luxurious on the palate. The flavours are very intense and complex, with toasty notes and vanilla from the oak. The mouth is wonderfully smooth, with an exceptional length. Drink it slightly chilled as an aperitif, or with any kind of meat dishes and cheeses.
