LE CLOS DE L’AZEROLLE
AOC Minervois

100% Carignan

Wine making process
The vineyard, 60 years old in average, is located on chalky clay terraces.
The grapes are hand harvested and sorted, first in the vineyard, then in the cellar.
The crop arrives in whole clusters in the cellar and goes directly to concrete tanks.
A carbonic maceration follows. This winemaking method keeps the grapes intact and develops very intense, fruity aromas.
A 14 months ageing in tank produces this wonderful wine.
This cuvee is named after the Azerollier, a small red berries borne Mediterranean tree. Many of them border the parcel of Carignan.

Tasting notes
Bright ruby red colour
The nose is perfumed with blackberry fruit, cherry notes and also violet.
Mouth: Attack is soft, with extraordinary smooth tannins. Flavours persist a long time in the mouth.

Le Clos de l’Azerolle will perfectly accompany a wide range of meat dishes and cheeses.
